DAIRY NEEDS
The following recipes are for powdered milk. In some recipes goats or cows milk can be used. The following is a list of things to keep on hand. One box is being used and the second for having plenty and letting you know to replenish without running out
2 boxes of powdered milk (no fat)
2 boxes of powdered milk (whole)
2 - 2 pound powdered butter
2 - 1 pound heavy cream
BUTTER (using heavy cream)
1 cup heavy cream
BUTTERMILK
1 cup of milk
1 1/2 tbs of vinegar or lemon juice
Mix together and allow to sit for 15 minutes
EVAPORATED MILK
1 1/4 cups of water
1/2 cup of powdered milk
Evaporated milk can be used for pumpkin pie or any other recipe that calls for evaporated milk.
HALF & HALF
1 cup of milk (use whole milk powder)
1 tbs of butter
Mix well
HEAVY CREAM
2/3 cup of milk (use whole milk powder)
1/3 cup melted butter
mix well
SOUR CREAM
2/3 cup powdered milk
3/4 cup cold water
1 tsp vinegar
Mix first two and then add vinegar and beat until thick and peaks form.
SWEETENED CONDENSED MILK
1 cup of powdered milk
2/3 cup of sugar
1/2 cup of boiling water
4 Tbs. of melted butter
Put all ingredients in a blender and mix until thick.
WHIPPED TOPPING
1/2 cup of powdered milk
1/2 cup of ice water
2 tsp. sugar
1/4 tsp. of vanilla extract
Place all ingredients in a chilled bowl and using a mixer on high mix until peaks form.
Make caramel sauce & whipped topping over canned apples.

2/3 cup of ketchup
3/4 cup of sugar

1 small onion quartered
2 tsp paprika

Put in food processor until smooth
GREEK
3/4 cup of olive oil
2 tsp garlic powder
2 tsp dried oregano
2 tsp dried basil
1 1/2 tsp pepper
1 1/2 tsp salt
1 1/2 tsp onion powder
1 1/2 tse dijon mustard
1 cup red wine vinegar
GREEN GODDESS
1 cup of mayonnaise
2 tbs scallions
1 tbs lemon juice
2 tsp chopped garlic
5 anchovy fillets
1 tsp tarragon
1 avocado
HONEY MUSTARD
1/4 cup of mayonnaise
1 tbs prepared mustard
1 tbs honey
1 1/2 tsp lemon juice
ITALIAN
1 tbs garlic powder
1 tbs onion powder
1 tbs sugar
2 tbs oregano
1 tsp pepper
1/4 tsp thyme
1 tsp basil
1 tbs parsley
1 tsp salt
1/2 tsp red pepper flakes
The above can be stored then add the following when needed.
1/4 cup of vinegar
2/3 cup of olive oil
Put in jar and shake
MAYONNAISE
1 egg yolk
2 tbs white wine vinegar or lemon juice
1/8 tsp salt
3/4 cup of oil
Mix egg yolk, vinegar and salt in a food processor. Keep processor running and slowly and in a steady stream of oil. It will soon emulsify and continue with the slow and steady stream until gone. This yields approxametly 1 cup of mayonnaise.
ORANGE GINGER
1/2 cup plain yogurt
2 tbs orange juice
1/4 tsp ginger
1/4 tsp salt
1 tsp sugar
1/4 tsp orange zest
pinch of cayenne
pinch of cinnamon
PEPPERCORN
1 cup of mayonnaise
1 cup of sour cream
1/3 cup of parmesan
1/4 cup of milk
3 tbs lemon juice
1 1/2 tsp cracked peppercorns
1/2 tsp garlic salt
1/2 tsp onion powder
Mix and allow to sit in refrigerator overnight.
RANCH
1 cup of mayonnaise
1/2 cup of sour cream
1/2 tsp dried chives
1/2 tsp dried parsley
1/2 tsp dried dill weed
1/4 tsp garlic powder

1/8 tsp salt

One of the most important chapters when it comes to cooking off grid. If you happen to read the three books written by Elizabeth Bacon Custer you will learn the other side of off grid living. Her husband concentrated on fighting and hunting but her books revolve around living on the plains and the hardships of living with very little extras. In her books she relates the monotony of the foods that are consumed while living in the west. On rare occasions Eliza, their cook, would come across a can of tomatoes and make ketchup that was considered a great treat. The following are gravies and sauce recipes that will make the most boring of foods more palatable and using easy to obtain ingredients. In chapter ? you will be shown how to can many of these recipes for future use.
ALFREDO SAUCE
1/4 cup of butter
1 cup heavy cream
2 garlic cloves crushed
1 1/2 cups parmesan
1 tbs + 1 tsp dry parsley
BASIL PESTO
2 cups fresh basil
2/3 cup of olive oil
2 cloves garlic crushed

BROWN GRAVY
1 cup of water

1/4 cup of butter

2 habaneros finely chopped
1 cup orange juice concentrate

COCKTAIL SAUCE
12 oz chili sauce
3 tbs horseradish
1 tsp worcestershire

COUNTRY GRAVY
2 tbs oil

TUESDAY OCT 10 DAY 1 No one here but me, have no idea what the world is like after the solar flare. Unlike the Carrington event of 1859 this one has stopped everything. I will check in the morning for all electronics. Winter is coming on and trees are turning colors. 1200 calories per day until spring for three reasons. 1) Food supplies will last longer 2) lose weight to get in shape 3) Overweight is like a neon sign around my neck "I have food." I will look for and grow more food in the spring. I have enough for 6 for 2 years. Breezy today, wind generator doing well in keeping batteries full. Watched a movie. Weighed myself, 265
OCT 11 Breezy and sunny outside both the solar panels and the wind generator are keeping the batteries full. Turned computer on and it's not working. Then spent the day working on wood for the winter after next. Will take the bastard file to one of the mauls tomorrow. Didn't need to use the sledge or the wood spikes. Will turn the TV on and see if I can get any local channels. TV is working but only one channel is available and quite snowy. Reminds me of watching TV in the 50s and 60s. TV Antenna seems to be working and TV and VCR work, will watch a movie later. Satellite was knocked out when the solar flare hit. Pick up is also dead. Just got through checking both generators, both are working, glad for that. The one channel showed the news this evening. Heavy riots in the low income areas. A lot of looting and shootings. John once said his wife and 2 kids would head for my place but so far no one.
OCT 12 Had eggs and toast for breakfast. Just plain white bread made with flour, sugar, yeast, powdered margarine, salt and water. kneaded the bread in the bread machine because of arthritis. Baked it in a foldable oven over the wood stove. Need to use that or microwave for cooking. In the spring I'll build an outdoor cook shack. About 4 PM I had an unexpected visitor. I saw a 4 wheeler pull up and pulled my 270 w scope just in case. It was a guy named Raymond, a friend of Johns who I let hunt here last year. Him and about 20 others are heading south to Lewiston, the banana belt for the winter, asked me to come along. I declined the offer. He brought along the makings for burgers and fries, figured it might be a while so I decided to go off my diet and indulge. Noticed I had no ketchup, didn't want to open the pantry so he could see all my resources including 24 bottles of ketchup. Only 3 people know I'm a prepper everyone else thinks I only stock up month to month. I like it that way, keeps me off the radar as a "have" target. I don't care for lying but I have no problem safe guarding information. Raymond told me at first everyone enjoyed the Aurora Borealis as the lights in Spokane went out, unfortunately it caused a great many sparks and fires. Very few fire engines were computerized and made it to the fires but the lack of power shut down the water pressure. The pumper trucks did what they could but the fires were just out of control. On the second day fires were burning, supermarkets were empty and barely a cop to be found. The entire state is down and no one knows where to send the National Guard first. Him and some friends decided to pool their resources and head south on 4 wheelers. He also told me he saw 2 airliners crash by the airport. The wires on the high tension lines are gone as if they just evaporated and he saw explosions somewhere west of him. Raymond will spend the night and leave after breakfast. Noticed a red glow in the western sky. At first I thought it was a beautiful sunset. by 10 PM I realized it was the city burning. The one emergency broadcast system is no longer working. Also saw a coyote checking out my chickens.

DAY FOUR OCT 13 Raymond and I had a breakfast of eggs, bacon and potatoes. After breakfast we shook hands and he left. Don't really know him that well and fear I may have been scoped out for a place to go, I'll know in a day or two. Fed the dogs and looked at their feed supply, enough dog food for 2 years. After that I'll make it from scratch. Glad the dogs are well trained the dog training book was worth it's weight in gold. A burnese mountain dog and a 1/2 Great Dane and 1/2 white lab. A lot of cumulus clouds overhead seems it might rain within 24 hours. My small weather station thermometer shows it's 48 degrees outside, the hygrometer shows 62% humidity, the barometer shows a drop in pressure making a good possibility for rain and the wind gauge shows winds are coming from the west at 7 mph. The rain gauge outside should let me know how much we get. The book on weather & clouds along with the weather station will certainly keep me informed on weather conditions.

DAIRY NEEDS
The following recipes are for powdered milk. In some recipes goats or cows milk can be used. The following is a list of things to keep on hand. One box is being used and the second for having plenty and letting you know to replenish without running out
2 boxes of powdered milk (no fat)
2 boxes of powdered milk (whole)
2 - 2 pound powdered butter
2 - 1 pound heavy cream
BUTTER (using heavy cream)
1 cup heavy cream
BUTTERMILK
1 cup of milk
1 1/2 tbs of vinegar or lemon juice
Mix together and allow to sit for 15 minutes
EVAPORATED MILK
1 1/4 cups of water
1/2 cup of powdered milk
Evaporated milk can be used for pumpkin pie or any other recipe that calls for evaporated milk.
HALF & HALF
1 cup of milk (use whole milk powder)
1 tbs of butter
Mix well
HEAVY CREAM
2/3 cup of milk (use whole milk powder)
1/3 cup melted butter
mix well
SOUR CREAM
2/3 cup powdered milk
3/4 cup cold water
1 tsp vinegar
Mix first two and then add vinegar and beat until thick and peaks form.
SWEETENED CONDENSED MILK
1 cup of powdered milk
2/3 cup of sugar
1/2 cup of boiling water
4 Tbs. of melted butter
Put all ingredients in a blender and mix until thick.
WHIPPED TOPPING
1/2 cup of powdered milk
1/2 cup of ice water
2 tsp. sugar
1/4 tsp. of vanilla extract
Place all ingredients in a chilled bowl and using a mixer on high mix until peaks form.
Make caramel sauce & whipped topping over canned apples.

1 egg yolk

Mix egg yolk, vinegar and salt in a food processor. Keep processor running and slowly and in a steady stream of oil. It will soon emulsify and continue with the slow and steady stream until gone. This yields approxametly 1 cup of mayonnaise.
ORANGE GINGER
1/2 cup plain yogurt
2 tbs orange juice
1/4 tsp ginger
1/4 tsp salt
1 tsp sugar
1/4 tsp orange zest
pinch of cayenne
pinch of cinnamon
PEPPERCORN
1 cup of mayonnaise
1 cup of sour cream
1/3 cup of parmesan
1/4 cup of milk
3 tbs lemon juice

Her husband concentrated on fighting and hunting but her books revolve around living on the plains and the hardships of living with very little extras. In her books she relates the monotony of the foods that are consumed while living in the west. On rare occasions Eliza, their cook, would come across a can of tomatoes and make ketchup that was considered a great treat. The following are gravies and sauce recipes that will make the most boring of foods more palatable and using easy to obtain ingredients. In chapter ? you will be shown how to can many of these recipes for future use.
ALFREDO SAUCE

TUESDAY OCT 10 DAY 1 No one here but me, have no idea what the world is like after the solar flare. Unlike the Carrington event of 1859 this one has stopped everything. I will check in the morning for all electronics. Winter is coming on and trees are turning colors. 1200 calories per day until spring for three reasons. 1) Food supplies will last longer 2) lose weight to get in shape 3) Overweight is like a neon sign around my neck "I have food." I will look for and grow more food in the spring. I have enough for 6 for 2 years. Breezy today, wind generator doing well in keeping batteries full. Watched a movie. Weighed myself, 265
OCT 11 Breezy and sunny outside both the solar panels and the wind generator are keeping the batteries full. Turned computer on and it's not working. Then spent the day working on wood for the winter after next. Will take the bastard file to one of the mauls tomorrow. Didn't need to use the sledge or the wood spikes. Will turn the TV on and see if I can get any local channels. TV is working but only one channel is available and quite snowy. Reminds me of watching TV in the 50s and 60s. TV Antenna seems to be working and TV and VCR work, will watch a movie later. Satellite was knocked out when the solar flare hit. Pick up is also dead. Just got through checking both generators, both are working, glad for that. The one channel showed the news this evening. Heavy riots in the low income areas. A lot of looting and shootings. John once said his wife and 2 kids would head for my place but so far no one.
OCT 12 Had eggs and toast for breakfast. Just plain white bread made with flour, sugar, yeast, powdered margarine, salt and water. kneaded the bread in the bread machine because of arthritis. Baked it in a foldable oven over the wood stove. Need to use that or microwave for cooking. In the spring I'll build an outdoor cook shack. About 4 PM I had an unexpected visitor. I saw a 4 wheeler pull up and pulled my 270 w scope just in case. It was a guy named Raymond, a friend of Johns who I let hunt here last year. Him and about 20 others are heading south to Lewiston, the banana belt for the winter, asked me to come along. I declined the offer. He brought along the makings for burgers and fries, figured it might be a while so I decided to go off my diet and indulge. Noticed I had no ketchup, didn't want to open the pantry so he could see all my resources including 24 bottles of ketchup. Only 3 people know I'm a prepper everyone else thinks I only stock up month to month. I like it that way, keeps me off the radar as a "have" target. I don't care for lying but I have no problem safe guarding information. Raymond told me at first everyone enjoyed the Aurora Borealis as the lights in Spokane went out, unfortunately it caused a great many sparks and fires. Very few fire engines were computerized and made it to the fires but the lack of power shut down the water pressure. The pumper trucks did what they could but the fires were just out of control. On the second day fires were burning, supermarkets were empty and barely a cop to be found. The entire state is down and no one knows where to send the National Guard first. Him and some friends decided to pool their resources and head south on 4 wheelers. He also told me he saw 2 airliners crash by the airport. The wires on the high tension lines are gone as if they just evaporated and he saw explosions somewhere west of him. Raymond will spend the night and leave after breakfast. Noticed a red glow in the western sky. At first I thought it was a beautiful sunset. by 10 PM I realized it was the city burning. The one emergency broadcast system is no longer working. Also saw a coyote checking out my chickens.

DAY FOUR OCT 13 Raymond and I had a breakfast of eggs, bacon and potatoes. After breakfast we shook hands and he left. Don't really know him that well and fear I may have been scoped out for a place to go, I'll know in a day or two. Fed the dogs and looked at their feed supply, enough dog food for 2 years. After that I'll make it from scratch. Glad the dogs are well trained the dog training book was worth it's weight in gold. A burnese mountain dog and a 1/2 Great Dane and 1/2 white lab. A lot of cumulus clouds overhead seems it might rain within 24 hours. My small weather station thermometer shows it's 48 degrees outside, the hygrometer shows 62% humidity, the barometer shows a drop in pressure making a good possibility for rain and the wind gauge shows winds are coming from the west at 7 mph. The rain gauge outside should let me know how much we get. The book on weather & clouds along with the weather station will certainly keep me informed on weather conditions.

OCT 14 Made an apple pie today. Did not cook it, just wrapped it and put it in the freezer. The apple peeler comes in handy. Will freeze some late bloomer carrots using plastic bags that I will now have to reuse by bleaching and drying in the future.
